Classic Bakewell tart with a cherry jam, enhanced with TFS Cherry flavouring

What You’ll Need


**For the Pastry:**

– 200g plain flour

– 100g cold unsalted butter, cubed

– 50g icing sugar

– 1 egg yolk

– Cold water, as needed

**For the Filling:**

– 150g unsalted butter, softened

– 150g caster sugar

– 3 large eggs

– 150g ground almonds

– 1 teaspoon almond extract

– 4 tablespoons cherry jam

– TFS Cherry Flavouring drops, to enhance the cherry jam

**For the Topping:**

– 100g icing sugar

– 1-2 tablespoons water

– Freeze-dried raspberries, crushed, for decoration




1. **Prepare the Pastry:**

– In a large mixing bowl, combine the plain flour and icing sugar.

– Rub in the cold cubed butter until the mixture resembles breadcrumbs.

– Add the egg yolk and a little cold water, then mix until the dough comes together.

– Wrap the dough in cling film and chill in the refrigerator for at least 30 minutes.

2. **Preheat the Oven:**

– Preheat your oven to 180°C (350°F) and grease a 23cm tart tin.

3. **Roll out the Pastry:**

– Roll out the chilled pastry on a floured surface to fit the tart tin.

– Line the tin with the pastry, trimming any excess. Prick the base with a fork and chill for another 15 minutes.

4. **Blind Bake the Pastry:**

– Line the pastry with parchment paper and fill with baking beans or rice.

– Bake in the preheated oven for 15 minutes. Remove the baking beans and parchment paper, then bake for an additional 5 minutes until lightly golden. Set aside to cool.

5. **Prepare the Filling:**

– In a mixing bowl, cream together the softened butter and caster sugar until pale and fluffy.

– Gradually beat in the eggs, one at a time.

– Fold in the ground almonds and almond extract until well combined.

6. **Assemble the Tart:**

– Spread the cherry jam evenly over the cooled pastry base.

– Enhance the cherry jam by adding a few drops of TFS Cherry Flavouring and mixing well.

– Spoon the almond filling over the cherry jam layer and spread evenly.

7. **Bake the Tart:**

– Bake the assembled tart in the preheated oven for 30-35 minutes, or until the filling is set and golden brown.

8. **Prepare the Topping:**

– Once the tart has cooled, mix together the icing sugar and enough water to make a smooth icing.

– Drizzle the icing over the tart and sprinkle with crushed freeze-dried raspberries for decoration.

9. **Chill and Serve:**

– Chill the tart in the refrigerator for at least 1 hour before serving to allow the icing to set.
