A tart and Sweet Lemon meringue pie recipe using TFS Lemon and TFS meringue Flavouring

What You’ll Need

For the crust:

200g digestive biscuits (graham crackers)

100g unsalted butter, melted

For the lemon filling:

4 large eggs, separated

1 can (400g) sweetened condensed milk

Zest of 2 lemons

120ml freshly squeezed lemon juice

5ml TFS lemon flavour drops

For the meringue topping:

4 large egg whites

200g caster sugar

5ml TFS meringue flavour drops

    Preheat your oven to 180°C (350°F).

    To make the crust, crush the digestive biscuits (graham crackers) into fine crumbs. You can use a food processor or place the biscuits in a plastic bag and crush them with a rolling pin. Combine the crumbs with the melted butter until well mixed.

    Press the biscuit mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the back of a spoon or your fingers to even out the crust. Bake in the preheated oven for 10-12 minutes or until lightly golden. Remove from the oven and let it cool.

    While the crust is cooling, prepare the lemon filling. In a large mixing bowl, beat the egg yolks until pale and creamy. Gradually add the sweetened condensed milk, lemon zest, freshly squeezed lemon juice, and TFS lemon flavour drops. Mix until well combined.

    Pour the lemon filling into the cooled crust and spread it out evenly.

    To make the meringue topping, in a clean, dry mixing bowl, beat the egg whites until soft peaks form. Gradually add the caster sugar, a spoonful at a time, while continuing to beat until stiff peaks form. Finally, add the TFS meringue flavour drops and beat until well incorporated.

    Spread the meringue over the lemon filling, making sure to spread it all the way to the edges of the crust to seal in the filling.

    Use the back of a spoon to create peaks in the meringue.

    Bake the pie in the preheated oven for 10-12 minutes or until the meringue is golden brown.

    Remove the pie from the oven and let it cool completely before slicing and serving.
